Power Punch Cookies


Power Punch Cookies

These cookies are a continual and evolving recipe.  My wonderful Mountain Man (MM) is a real cookie monster so, I am continually trying to develop a cookie recipe that is a sort of healthy mix but taste very decadent.  As MM often has protein powder on hand I have been trying my hand at using it in the cookies.  He is a real lover of chocolate and cinnamon so these seem to really hit the spot and even though I just completed a batch yesterday there are only a few stragglers left.  Baking in a wood stove has it's challenges so the ones left are just a little bit more "chocolate colored" than they really should be.  

Ingredients:
2/3 cup Butter
1/2 cup Brown Sugar
2 Eggs
1 teaspoon Baking Soda
1 teaspoon Cinnamon
1 teaspoon Vanilla
1 cup Protein Powder (the one used for this recipe is Chocolate Fudge by MuscleMax)
1 cup Oats (either old fashioned or quick will do but I always try to use old fashioned oats)
1 cup Flour
1/2 cup Chocolate Chips

Directions:

If using a wood stove (we have a Pioneer Maid) add at least 3 or 4 logs. Close the damper so the fire must go around the oven before going up the chimney.  Open the air vents to allow more air into the firebox.  I usually have them at about a 3/4 turn. Make sure the oven is closed (we have it open on real cold days as more heat is given off ).

If using a conventional oven preheat to 350 F.

In a medium to large bowl cream butter and sugar together. Add the rest of the ingredients one at a time beating after each addition.  Such a simple recipe!  I rarely, if ever, use more than one bowl to make something.

If you are using a conventional oven it is most likely hot by now and you can go ahead with baking your cookies.  However, if using a wood stove grab a book and read for a bit or whatever else takes your fancy. 

Bake cookies for about 10 to 12 minutes depending on the heat in your oven.  A wood stove never seems to have an even heat so keep an eye on them. The smell always drives me crazy way before they are done.  

If you make smaller sized cookies this will make about 3 dozen.  They are about 80 calories and have 2.63 grams of protein.  If you make slightly larger cookies like I do it makes about 30 cookies which are about 94 calories and 3 grams of protein.
