My mom would make a pork ...I grew up eating geotta. My mom would make a pork roast and the left over were ground up. She finely chopped up celery, onions, poultry seasoning, rubbed sage, salt, rosemary, garlic powder and then saute `d it in a bit of butter til the vegetables were soft. She put this and the pork into a pot of water with the oats and let it simmer for hours til the oats were cooked and it was thick. She put it in loaf pans til it was set.<br />wrapped it in foil and put it in the freezer. This is what I remember, she didn't have a recipe, just added and tasted. She learned how to make it from her mother in law who lived in Covington, Kentucky.
