Mountain Man's Favorite Scones


I'm not really sure if you can call these a scone or if they are just more of a semi-sweet bread. The recipe originally came from one called Welsh Cakes. I tried it as I was looking for something I could cook on top of the wood stove without having to heat the oven as that takes quite a bit of time. It just didn't work. No matter how hard I tried I couldn't get them to taste the way I thought they should. Which was probably a good part of the problem.

However, I wasn't about to give up and so I started to experiment with the recipe. Mountain Man loves something a bit sweet and totally bad for him at least once a week. He is also the kind of guy who thinks pie crust is the best part of the pie while I prefer the filling. I have many times tried to get him to try more healthy foods, and he will, but he just has a craving for decadence once in a while. So, as he liked the flavor and kept asking for it again and again I finally figured out a recipe which would satisfy his need. Bear in mind these are not something I love, although I do end up having at least one... OK... maybe two. They are his favorite.

They are super easy to make so here goes.

Ingredients needed:
2 cups flour
1/2 cup butter or margarine
2/3 cup sugar
1/2 tsp nutmeg
2 tsp baking powder
1 egg, beaten
1/2 cup milk

Preheat oven to 350 degrees. Combine flour and butter until mixed fine, I usually use a pastry blender for this. Then add the sugar, nutmeg and baking powder. Mix together well. Measure the milk into a small bowl, add the egg and beat together. Add to main mixture and mix until all is moistened. Wash your hands and get them into the bowl to finish mixing. Don't over mix but you want to gather all the dough together. Then divide the mixture into two balls.


Flour a space on your counter or on your cutting board and using your hands pat down into a round shape. Not thin! I guess about a 1/2 inch or so? I should have measured but I think the dough is about six inches in diameter. Cut into six. Repeat with second ball.



Place on ungreased baking sheet and bake for approximately 12 minutes or until golden. My wood stove is variable depending on how hot I get it! Sometimes it take me 10 minutes to bake them and once it took 1/2 an hour. I've been baking for almost four years with this wood stove but I still can't get it right sometimes. My grandmother however was a real pro! Maybe someday I will be too.... I usually sprinkle them with a sugar and cinnamon mixture or icing sugar as soon as I take them out of the oven. Cost for me to make these $1.26/batch.

Yep, had to cut the edges off my baking pan as my wood stove has a much smaller oven.

  2. Oh, wow! I was hoping you'd give us the recipe. These look wonderful, and I'm sure your house smells oh so good. I love nutmeggy (and cinamonny) things. Something like this cooked on top of the stove. . . hmmm wouldn't that be convenient? Maybe in a covered cast-iron frypan on a warm rather than hot spot on the stove? It's a good idea to cut your pans to fit the oven - I have the same problem but figured I'd have to get smaller pans. Thanks for that idea. Take care. Gloria

  3. I may try these. They look wonderful! I wonder if I could substitute whole wheat flour? I grind my own hard white wheat.

  6. These look great! Will they keep overnight, or are the best eaten right away? I'm not a morning person, so I typically get our breakfast food ready the night before.

  7. The last time I made these I rubbed the sugar cinnamon mixture on top before baking. They turned out fantastic but you really have to be careful not to burn them as the sugar will burn quickly if you aren't careful.
