Recipe Thursday - Simple Chocolate Pudding



While I was in town the other day I went to the grocery store for a few items. While I was there I noticed a sale on pudding and saw many people filling their carts. No doubt for snacks or lunches for school or work. I stood there for a few minutes and contemplated all the times I had done the same thing. It is so easy to grab a snack container and throw it in a lunch kit or eat it as a snack but how much money did I waste by not making it myself? Hmmm.... Maybe I don't really want to know. By far the most popular pudding in my house was always chocolate. Mmmm.... Love chocolate pudding. Now however, I make it all myself and am amazed at how easy it is! In about 5 to 10 minutes I have it made and cooling. I also don't have to worry about all the chemicals in the commercially made stuff. I know whats in my pudding!

It uses up some of my unending supply of milk from the goats. We really are over run lately and I'm finding I have enough to make a batch of cheese every few days. This will really be great for in the winter! If you haven't made chocolate pudding give it a try. This is the simplest recipe ever and its great, especially if you have some whipped cream on hand!

Simple Chocolate Pudding

Ingredients:
1/2 cup sugar
3 tablespoons cocoa powder (I make these heaping! I love chocolate!)
1/4 cup cornstarch
1/8 teaspoon salt
2 3/4 cup milk
2 tablespoons butter (will often only add 1 tablespoon and haven't notice a difference in the taste. Of course I use whole milk so maybe that is making the difference)
1 teaspoon vanilla

The most important part of this recipe is to make sure to mix the first four ingredients together well. Just put them all in the pot you will be using and mix carefully. You want to make sure there aren't any lumps or your pudding will have lumps too. Sometimes I get in there with my fingers and make sure to get them all out.



Once mixed together well. Add the milk and slowly bring it to a boil. Use a whisk and stir constantly.


Looking good!


As soon as it boils take it off the heat and add the vanilla and butter.


Once mixed together well pour into your containers to cool. Refrigerate once cool. Enjoy!

  1. That sounds good! I used to buy all those snacks too, but had to stop when the economy knocked our business to its knees. Best thing that ever happened to us! I make everything now. I also have dairy goats. I'm getting about a gallon and a half a day now. I make yogurt and buttermilk haven't figured out cheese though...my hubby doesn't like it bland but I don't know how to make it "right". I was using packaged pudding mix but I'm going to try your recipe...one more thing I don't have to buy. Thanks!

    Agreed, the stuff already made is so full of chemicals (somethings one can't even pronounce). Our famiy loves pudding, chocolate, vanilla and the occasional tapioca. The next time I make pudding, I will try your recipe.

  7. Found this on Pinterest, and I'm going to try it today. Do you know if it makes a large enough batch to make a pie? A nice crust and a dollop of real whipped cream on top would be yummy.

    2. I just made an 8" pie with this yesterday. Plenty of pudding for the pie with a small dish left for my non-pie-eating child. :-)

  8. This is the easiest homemade pudding recipe! My mom has a similar recipe but hers has lots more sugar & 3 eggs plus lots more stirring after adding the eggs. I tried your version & no one here could taste a difference! I'm so glad I saw your recipe! Thanks for sharing!
