A Canning Mistake...


You know, I really hate posting about all my mistakes but sometimes they are just so funny I can't help but share them with you.

Last evening I was going through all my canned goods and thinking about what needs to be used up fairly quickly and what I need to put up this year when I came across my pickled beets. Now I love pickled beets! I mean I can sit down and eat a whole jar in one sitting! The fact that they have very few calories is always a plus for me so I never feel guilty. As I looked at the jars sitting on the shelf I decided I had to have some. Why were they all sitting here anyway? Surely I must have missed them or they would be all gone? So taking that lovely jar I opened it and proceeded to eat some....

What was this?? This didn't taste like pickled beets!!! Oh no......  now I remember....  sigh...  All these lovely beets and they don't taste anything like they should.

It was a few years ago... I had received a bounty of beets from a neighbor who had way too many and didn't know what to do with them, so I took them home. Boxes and boxes of lovely beets! I knew just what I wanted to make. I would pickle them! Yum! I had just enough ingredients to get started, so I proceeded to pickle as many as I could. It wasn't long until I ran out of supplies and had to go to town. While I was there I noticed an amazing sale on pickling supplies. Lovely little pre-made packages of pickling spices all ready done up. This would save me some time!!! Yeah!

Happy as a clam I went home and finished pickling all those lovely beets, not realizing that the pickling packages I chose where the wrong ones. Yep, I used a dill pickling spice on beets... those lovely last few batches taste like dill pickles.... (shaking my head at my stupidity)

So, here I sit with 6 jars of what looks like lovely pickled beets...  Sigh... I can't bear the thought of tossing them out but I just don't know if I can get used to the taste enough to eat them. Maybe if I think of them as dill pickles?? Hmmm....
